Pumpkin Roulade, etc.

Q: I am planning to make a pumpkin roulade, but don't want to use cream cheese filling and instead would like to use a pumpkin mousse. Can you suggest a recipe?

What about an easy whipped cream-based filling? There's a product called Baker's Cream (we've seen it in some Safeway stores in the Washington area) that's basically whipping cream with some stabilizers. To make about 1- 3/4 cup filling, you could beat 1/2 cup of the chilled cream with a tablespoon of confectioners' sugar and maybe a teaspoon of vanilla extract, to the firm-peak stage. Then gently fold in 1/4 cup of canned pumpkin (the puree).
Let us know how it turns out.

Q: I would like to have Thanksgiving delivered to my parents. I live out of state and it is too much for them to cook all the goodies. Do you know of anyplace in the Silver Spring-Colesville-Wheaton area that delivers a really good Thanksgiving dinner?

Bonnie Benwick says area caterers could do this, but they may not deliver on Thanksgiving Day. It would be pretty expensive, and there probably would be an additional delivery fee.

Some local grocery stores, Safeway and Giant, for example, are offering prepared Thanksgiving dinners. You can ask about delivery, but they might have to pick it up.

I'd call the Safeway and the Whole Foods, both in downtown Silver Spring, to see what they say about delivering dinner. I know the Whole Foods delivers as part of their catering services.

I looked on line and there was a site, www.gourmetstation.com, that delivers nationwide. While they won't deliver on Thanksgiving, they will deliver the day before for a small fee. About $90 gives soup, White meat turkey fillet nestled on bed of rosemary sage dressing with creamy brown gravy. Served with traditional cranberry & pecan relish, bread and pumpkin praline cheesecake. Just heat for 30 min in oven.
